A vegetable garden nurtured with care, where each season writes its own story

Vegetable garden

Our vegetable garden allows us to cultivate with awareness and harvest with respect. We follow the biodynamic lunar and planetary calendar, working in harmony with the natural rhythms of plants and soil.
Every product from this land reflects the balance between humans and the nature that nourishes them.

The greenhouse

In the greenhouse, nature reveals itself in tiny, unexpected ways. This vital yet silent space allows us to grow each crop at the right time, in harmony with the seasons.

The greenhouse enables us to cultivate certain crops under more controlled conditions, enhancing their quality without ever forcing their growth.

La Gilda:
our growing land

A 10,000-square-metre plot in Roncocesi where the strength and simplicity of the land are fully expressed.
Here, we grow spelt and potatoes using biodynamic methods, in harmony with the natural rhythms of the soil.

La Gilda is a place of observation and reflection, where manual labour and care for the land come together to shape a sustainable, authentic agricultural cycle.

Harvesting

The selection of crops stems from the intuition of chef Andrea Incerti Vezzani, who carefully chooses the ingredients that will become the stars of each dish.
We follow biodynamic principles to enhance both the organoleptic and vital qualities of every plant.

Crops are harvested shortly before service, with no artificial preservation, to bring a living, authentic, and expressive product to the kitchen.
