Cooking as memory and vision by Andrea Incerti Vezzani
The chef
My name is Andrea Incerti Vezzani, and my cuisine stems from a deep intertwining of who I am, what I have experienced, and what I feel.
Each dish I create is a conscious gesture, a fragment of memory, a way to tell the story of my homeland.
Raw ingredients are the starting point, but it is inspiration that shapes my vision: a cuisine that respects, evolves, and communicates.
The connection with the vegetable garden
Our biodynamic vegetable garden is a living organism that accompanies us every day. I follow its seasonal rhythms, made of authentic, sincere, human imperfections.
For me, the garden is the purest manifestation of my culinary philosophy: sustainable, essential, valuing what is simple and deeply authentic.
The Parmigiano Reggiano Ragù
I wanted to create a product that would speak of my homeland in a contemporary and accessible way.
That’s how the Parmigiano Reggiano ragù was born: a vegetable reinterpretation of a great Emilian classic, reinvented with awareness.
This product, born from respect for raw ingredients, is a way to enhance what we already have, reduce waste, and transform each ingredient into a sustainable gesture.
